Raisin Meringue Kisses

Light, airy and oh so good to eat!

  • Yields 3 dozen (2-inch) kisses.

INGREDIENTS
  • 4 egg whites
  • 3/4 tsp. salt
  • 1 tsp. vanilla
  • 1 c. granulated sugar
  • 2 c. cornflakes
  • 1/2 c. flaked coconut
  • 1 c. California raisins, coarsely chopped
PROCEDURE
Beat egg whites with salt and vanilla until stiff. Gradually, beat in sugar, beating until very stiff. Fold in cornflakes, coconut and raisins. Drop by teaspoonfuls onto lightly greased baking sheets. Bake at 350°F for 20 to 25 minutes or until set and a rich golden brown. Remove immediately to wire racks to cool. Store in airtight container with foil or waxed paper between layers.
