Turkey Mrouzia with California Raisins

Turkey stew with unique Mediterranean flavors.

- INGREDIENTS
- 1/4 c. vegetable oil
- 1 small to medium-size turkey (6 to 8 lbs), cut into parts
- 3 large onions, divided
- 1/4 lb. butter
- 3 c. water
- 2 tbsp. ground ginger
- 2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 3 or 4 bay leaves
- A large pinch of ground cloves
- A few strands of saffron, presoaked in warm water
- Salt; to taste
- 1-1/2 c. California raisins
- 1/2 c. honey
- 1/4 c. blanched almonds, toasted
- 2 tbsp. sesame seeds
- PROCEDURE
- In large pot, heat oil; add and brown turkey. Dice 1 onion and add to pot along with butter, water, spices and salt to taste, stirring constantly. Cover and cook 35 to 40 minutes. Remove turkey from pot when done; set aside. Then, thinly slice remaining 2 onions and add to pot along with raisins; stir well and continue to cook 10 minutes more. Stir in honey; reduce heat to medium and cook a few minutes longer. Return turkey to pot and simmer another 10 minutes to reduce sauce and heat through.
To serve, arrange turkey pieces in center of large platter; spoon sauce over and garnish with plumped and drained raisins, toasted almonds, and sesame seeds. - Nutrition Information (per serving)
