Raisin Dumplings in Caramel Sauce

Old fashinoed dumplings, baked in the oven topped with carmel sauce and raisins sprinkled throughout.

- INGREDIENTS
- 1/2 c. California raisins
- 1 c. water
- 1/2 c. brown sugar
- 2 c. water
- 1 tsp. vanilla extract
- 1 tbsp. pure maple syrup
- 1 tsp. butter
- 1/2 c. granulated sugar
- 2 tbsp. butter, melted
- 1/2 c. evaporated mik
- 2 tsp. baking powder
- 1/8 teaspoon salt
- 1 c. all purpose flour
- PROCEDURE
- Preheat oven to 350°F. In a small saucepan, boil 1 cup of water. Add raisins and simmer until water boils away, about 30 minutes. Set aside.
Meanwhile, in small saucepan, bring brown sugar and 2 cups water to boil. Remove from heat and add vanilla, maple syrup and butter. Set aside.
For dumplings, drain raisins thoroughly and pat dry with paper towel. Mix remaining ingredients all together and stir in raisins. Reheat and spread one-half of Caramel Sauce in bottom of 13 x 9 x 2-inch nonreactive baking dish. Drop dough by tablespoonsfuls into hot sauce. Pour remaining sauce over all and bake 350°F for 30 minutes, or until done. Serve topped with vanilla ice cream. - Nutrition Information (per serving)
