California Raisin, Rice and Carrot Salad
A refreshing salad to serve with almost any meal.

- Serving size: 1/2 cup per serving
- INGREDIENTS
- 2 tbsp. mayonnaise
- 1/4 c. buttermilk
- 1/2 tbsp. cider vinegar
- 1 tsp. honey
- 1 c. cooked brown rice
- 1 c. grated or shredded carrots (3 medium)
- 2 tbsp. finely chopped or thinly sliced green onion
- 1/2 c. California raisins
- PROCEDURE
- Measure mayonnaise into a medium bowl. Slowly add buttermilk, whisking until smooth. Whisk in vinegar and honey. Stir in rice, carrots, onion and raisins; mix well. Serve at once or chill thoroughly.
