California Raisin, Rice and Carrot Salad

A refreshing salad to serve with almost any meal.

INGREDIENTS
  • 2 tbsp. mayonnaise
  • 1/4 c. buttermilk
  • 1/2 tbsp. cider vinegar
  • 1 tsp. honey
  • 1 c. cooked brown rice
  • 1 c. grated or shredded carrots (3 medium)
  • 2 tbsp. finely chopped or thinly sliced green onion
  • 1/2 c. California raisins
PROCEDURE
Measure mayonnaise into a medium bowl. Slowly add buttermilk, whisking until smooth. Whisk in vinegar and honey. Stir in rice, carrots, onion and raisins; mix well. Serve at once or chill thoroughly.
