California Golden Raisin Sauced Celery Seed Wafers Stacked with California Raisin Jam and Nut Butter

Fun to stack and fun to eat --- California Raisins, peanut butter and celery for dessert.

INGREDIENTS
Candied Celery
  • 2 c. diced celery
  • 1/2 c. (4 ounces) sugar
  • 1/2 c. (4 ounces) water
Celery Seed Wafers
  • 1 c. butter, softened
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 1/4 tsp. ground celery seeds
  • 1 egg
  • 2-1/2 c. all purpose flour
California Raisin Jam
  • 1-1/2 c. (8 ounces) California raisins
  • 2 tbsp. sugar
  • Ground cloves
  • Ground pepper
California Golden Raisin Sauce
  • 1-1/2 c. (8 ounces) California golden raisins
  • 1/4 c. (2 ounces) water
  • 1/4 c. (2 ounces) sugar
  • 1/2 c. (4 ounces) Calvados wine
Nut Butter
  • 1-3/4 c. (1 pound) peanut butter
  • 1 pt. half-and-half
  • 8 oz. toasted peanuts, chopped
PROCEDURE
Candied Celery
Combine all ingredients in saucepot. Cook until thick and syrupy. Spread on paper-lined baking sheets; set aside.
Celery Seed Wafers
Preheat oven to 350°F. Beat butter and sugar together until light. Add salt, celery seeds and egg; beat until well blended. Stir in flour just until blended. Roll out on lightly floured surface to 1/16-inch thick. Cut into 32 rectangular shapes. Arrange on ungreased baking sheet and bake at 350°F until golden brown. Cool on wire rack.
California Raisin Jam
Combine ingredients in small saucepan and cook until mixture is thick. Chill.
California Golden Raisin Sauce
Combine ingredients in small saucepan and cook over medium heat. Simmer until thickened, about 20 minutes. Turn into blender container and blend until smooth. Chill.
Nut Butter
Whip peanut butter until light and fluffy. Add half-and-half; beat until smooth. Set aside.
To Serve
Spread 16 wafers with a thin layer of nut butter and the remaining 16 wafers with a thin layer of raisin jam. Stack jam spread wafers on top of ones spread with nut butter. Arrange wafer stacks on individual serving plate and spoon raisin sauce over all. Garnish with candied celery and chopped nuts.
