Spicy Raisin Relish Salad

Raisins, celery and apples in a spiced cider gel.

INGREDIENTS
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • Pinch of ground cloves
  • 1/4 tsp. seasoned salt
  • 3 c. apple cider
  • 1 pkg. (6 oz) lemon gelatin
  • 1-1/2 c. California golden or natural raisins
  • 1 c. chopped celery
  • 1 c. chopped apple
  • Salad greens
PROCEDURE
In saucepan, mix together spices, salt and 1 cup cider. Simmer 2 to 3 minutes. Add gelatin, stirring until dissolved. Remove from heat. Stir in raisins and remaining cider. Cool; then, chill until mixture begins to thicken. Stir to distribute raisins; add celery and apple. Turn into a 2 to 2 1/2-quart mold; chill until firm. When ready to serve, unmold on a bed of crisp salad greens.
