Sweet Potatoes with Raisin-Orange Sauce
Here's a healthy alternative to sugar-loaded candied yams.

- INGREDIENTS
- 6 sweet potatoes or yams (2 1/2 to 3 pounds)
- 1/3 c. sugar
- 3 tbsp. cornstarch
- 1/2 tsp. salt
- 1 c. pineapple-orange juice
- 1 tsp. grated orange rind
- 1/4 c. fresh orange juice
- Dash of ground red pepper
- 1 c. California golden or natural raisins
- PROCEDURE
- Peel and slice or dice potatoes; steam just until tender, about 15 to 20 minutes. Remove from heat and drain. Return potatoes to kettle. Meanwhile, combine sugar, cornstarch and salt in small saucepan. Gradually stir in pineapple-orange juice. Bring to boil; cook until thickened, about 1 minute, stirring constantly. Remove from heat and stir in grated orange rind, orange juice, red pepper and raisins. Pour sauce over hot cooked potatoes; mix well. Serve hot.
