Roasted Asparagus with Balsamic Brown Butter and Raisins

California raisins, balsamic vinegar and butter -- unbelievable sauce for asparagus.

INGREDIENTS
  • Cooking spray
  • 1/8 teaspoon kosher salt
  • Black pepper, to taste
  • 1 tbsp. butter
  • 1 tsp. low-sodium soy sauce
  • 1/2 tsp. balsamic vinegar
  • 3/4 c. California raisins
  • 1 lb. asparagus spears, trimmed
PROCEDURE
Arrange asparagus in a single layer in glass baking pan; coat with cooking spray. Sprinkle with salt and pepper. Bake at 400°F for 12 minutes or until tender. Meanwhile, melt butter in a small skillet over medium heat; cook for 3 minutes or until lightly browned, shaking pan occasionally. Remove from heat; stir in soy sauce, vinegar and raisins. Drizzle over asparagus, tossing to coat well. Serve immediately.
