Embutido (Filipino Meat Loaf)
Pork and chicken combine with raisins and chopped vegetables for a typical sweet Filipino dish.

- Serving size: Embutido slices and 1/4 cup sauce
- INGREDIENTS
- 8 oz. ground pork
- 6 oz. ground chicken
- 1/4 c. chopped celery
- 1/4 c. shredded carrot
- 1/4 c. chopped red pepper
- 1 cloves garlic, minced
- 1/2 c. California raisins
- 2 tbsp. Chinese sausage
- 1/4 c. frozen peas
- 1/4 c. bread crumbs
- 1 egg, beaten
- 1 tbsp. oyster sauce
- Vegetable oil; as needed for grilling or sautéing
- Chopped spring onion; as needed for garnish
- PROCEDURE
- Preheat oven to 350°F. In a bowl, mix meat loaf ingredients, except oil, all together. Divide into 2 equal portions. Shape each into a log and wrap in 8x10-inch sheet of aluminum foil. Twist ends tightly into sausage shape. Place in deep baking pan. Bake at 350°F for 1 hour. Cool for 20 minutes. Unwrap and bowl on grill, brushing lightly with oil, or sauté lightly in hot oil.
For Sauce, combine chicken broth and bay leaf in small saucepan. Bring to boil. Add tomato paste and return to boil. Remove from heat; discard bay leaf and season to taste with salt and pepper.
To serve, slice each roll to 4 slices. Arrange 2 slices on each serving plate; divide and spoon sauce over or serve sauce on the side. Sprinkle finely chopped spring onion over all. - Nutrition Information (per serving)
